Ce restaurant a été créé pour Jean-Georges Vongerichten, grand cuisinier français distingué de trois étoiles au Guide Michelin. L’architecture intérieure horizontale est soulignée par des panneaux de bois sablés et des niches d’expositions. Ce lieu est construit à partir de sa géométrie spatiale et autour d’une cour intérieure. Le bar à huître horizontal, le long banc, les niches d’expositions, et le dessin des panneaux de bois s’organisent comme des lignes superposées qui architecturent l’espace.
